Eating: How it works and where to go!
In Florence as in most of Italy, there are time-honored traditions when it comes to cuisine, etiquette and even the order in which food is served and eaten. Florentine’s are no exception to this rule and a traditional meal begins with what is commonly known as antipasti/antipasto (aka appetizers). Antipasti typically includes crostini mista (basically grilled baguette topped with a variety of toppings such a bruschetta, liver pate and/ or mushrooms), curred meats; typically prosciutto crudo (thinly sliced, uncooked ham) and/ or various salami’s, and fresh tomato, mozzarella and basil, etc.
In Italy portions are generally much smaller than typically seen in North America, etc Florentine’s generally eat two courses to each meal- the first called Primi Piatti which generally consists of some type of pasta dish, a vegetable-and-bread based soup or a salad. You will quickly learn (and observe) that it is very customary to add small amounts (or large- dependent on your taste!) of local olive oil to most dishes (including pizza, salad, grilled meats, cheeses, etc). The second course called Secondo (or secondi piatti) is where meat lover’s rejoice! One of the most popular (and certainly one we highly recommend!) secondo is the Bistecca alla Fiorentina- a thick slice of beef, served rare (so please note if this is NOT something you enjoy this will need to be specified as generally server’s will not ask). This is generally grilled, and seasoned with olive oil, salt and/ or pepper. Bistecca Fiorentina is often made to be shared so it is best to inquire when ordering if you are in doubt! Alternative secondi piatti’s typically include, Branzino (Sea Bass), Vitello (Veal), Pork (Maiale) and/ or various Petto di Pollo (chicken breast) dishes.
After all of this dinner’s are often finished off with digestive drinks; limoncello, grappa and/ or monte negro being the most popular. Restaurants often provide these drinks on-the-house without being specifically ordered. Typical Italian dessert will include Crème Caramel, Gelato, Panna Cotta and the most popular Tiramisu. And of course, for those of you who are not bothered by late night caffeine the traditional Italian coffee’s are also available (café normale= normal espresso served black, café macchiato= espresso top with a bit of heated cream (foam), etc, etc)
