A typical Florentine sandwich
Lampredotto is one of the most basic Florentine foods that has survived through the ages and is still sold in its most basic forms throughout the streets of Firenze. Originally a sandwich for the peasants, it is still one of the most basic and cheap foods available for the masses.
Not the most attractive of foods, lampredotto comes from the fourth and final stomach of the cow. It resembles a cooked eel in color and texture, which is actually where it gets its name. It is generally cooked with tomato, onion, parsley and celery then seasoned and put on bread.
There are many places throughout Florence where you can sample this local “delicacy” including stalls throughout the streets of the city center. So if your stomach is up to it, stop by one of vendors and have a taste!
